Chicken Kelaguen Lazy Style

My Chamorro roots sometimes makes me crave for local food. One of the common dishes back home is Chicken Kelaguen. It’s a similar dish to other islands or Spanish influenced foods such as, ceviche. However, unlike ceviche where the acidity of the lemon cooks the seafood, Chicken Kelaguen must be prepped to prevent salmonella. The traditional way of making Chicken Kelaguen is marinating the chicken to be grilled on a hibachi. The hot, steaming, marinated juices of the bbqued chicken provides the unique flavor of Chicken Kelaguen. Different meats can be substituted for chicken. We make Shrimp Kelaguen, Beef Kelaguen, Deer Kelaguen, and whatever your heart desires. With shrimp, deer, and beef, it doesn’t have to be cooked before mixing with the lemon. These meats are able to cook in the acidity of the lemon. Below I share with you my Lazy version of chicken kelaguen. It makes for great tacos after a long day and not wanting to take the time to prep bbqued chicken.

Kelaguen is known as a salad, side dish, or main dish. Its main ingredient that makes it so delicious is the squeezed lemon juice. The citrus mixed with salt and onions is refreshingly delicious. This time around I incorporated Young Living’s Lemon Vitality oil from my Premium Starter Kit (PSK). 

Ingredients

Cut the Chicken Breast from store bought rotisserie chicken.

10 drops of Lemon Vitality Essential Oil (may be adjusted to taste)

Salt to Taste

1/2 cup of Chopped Onions

3 stalks of scallions 

Corn Tortillas

Serving Size: 2 Servings or 2 tacos per person

Prep Time: 15 min not including driving to the store to buy rotisserie chicken

Starting with the store bought rotisserie chicken. Dice the chicken breast into bite size pieces or smaller. You can use any part of the chicken for the meat, but for instruction sake I used the breast. Dice your onions and scallions and mix in a bowl. Add lemon drops or squeeze lemons to taste and add a pinch of salt for enhanced flavor. Stir and serve on corn tortillas. That’s my Chicken Kelaguen Lazy Style.
